3 clever uses for leftover coconut milk

Does your recipe only call for 1/2 cup coconut milk? Now what to do with the rest? Here's 3 tips for your leftovers.














Freeze: In an ice-cube tray; drop three to four coconut cubes into chai ice tea for a smooth, cool treat.

Mix: Coconut milk with minced garlic, grated ginger, lime juice, and crushed red pepper flakes. Use as a marinade for chicken or fish.

Dilute: With a bit of water, substitute liquid in pancake batter of oatmeal.
